Singapore’s coffee scene continues to evolve, but few names are as committed to craft and clarity as 20grams Roastery. At the center of it is Alvin, owner and head roaster, whose journey into coffee spans nearly a decade of hands-on work—from espresso machines to coffee farms.

In this first edition of CropTalk, we sit down with Alvin. We explore what drives his approach to coffee. We discuss why light roast matters. Long-term relationships shape quality as well.

Introduction

Could you introduce yourself and your role at 20grams Roastery?

Hello, I’m Alvin. I own a coffee roastery in Singapore, where I am the primary coffee roaster of the place.

How did your journey into coffee begin, and what led you to where you are today?

It started more as a hobby. I really loved working with the espresso machine. Over time, coffee became much more than that. I can now work as a barista, roast coffee, and travel to farms to help farmers improve their product. It’s been almost 10 years, and I never get tired of working with coffee.

What inspired the creation of 20grams Roastery, and how has it evolved over time?

I wanted to deliver high-quality, sweet, clean, and light roasted coffees, which were not present in Singapore at the time. At 20grams, you can only drink coffee or purchase beans. The idea was simple: to create a place where people bond over coffee.

How would you describe your approach to sourcing, roasting, or brewing coffee?

Our roastery is known for extremely light roast profiles. The secret is not only in green coffee selection but also in roasting quality. The goal is always to reveal the coffee’s true identity.

What makes your coffee or café unique within Singapore’s coffee scene?

I compete in local and overseas roasting competitions frequently. Each time, I bring back knowledge and inspiration. Learning from fellow competitors pushes me to improve. This journey led me to work closely with farmers to improve green coffee quality. I believe in building long-term relationships with farmers—it’s the best way to ensure quality over time.

What challenges have you faced operating in Singapore?

Many people here are unfamiliar with extremely light roast coffee. These coffees have bright acidity, lighter mouthfeel, and refined complexity compared to darker roasts. Education takes patience. Teaching people to appreciate subtlety and origin-specific flavor takes time and open-mindedness.

Is there a particular coffee or origin you’re especially proud of right now?

Kenya is my favorite origin. The people are extremely friendly, and the coffees are fantastic.

What does the future look like for 20grams Roastery?

We plan to keep improving what we do and grow just enough so we can buy more—and better—coffees.
